Blueberry Pistachio Chocolate Bars

About the Recipe

This recipe is easy and delicious, combining the stress-busting effect of dark chocolate, pistachios and high levels of antioxidants in blueberries. It makes a great snack option for any time of the day.
It also makes a great homemade present option.

Ingredients

150g good quality dark chocolate (I like to use 80% or darker)

¼ cup (37g) chopped dry blueberries (you can use other dried fruits)

¼ cup (25g) chopped pistachios (you can use other nuts)


Optional

Add some pieces for flavour: cinnamon, cardamom, vanilla, orange or lemon zest, mint oil, chilli flakes or a pinch of salt.

Preparation

Cover a small tray or a plastic container with waxed or parchment paper to be your mould.


  1. In a double boiler, melt the chocolate.

  2. Remove from heat, and stir in nuts and dried fruit. Add spices if you are using any, and mix well. 

  3. Pour the mix into the prepared tray or container.

  4. Tap it slightly on the counter to remove any air bubbles it might have formed. 

  5. Now let it cool down completely on the counter or put it in the fridge till completely firm. 

  6. When the chocolate is completely cool, remove it from the mould. If you notice any condensation forming around the bar, tap it dry.

  7. Now cut into slices and you can wrap each slice up using parchment paper or keep them in an airtight container in fridge.
