About the Recipe
This Chilli is packed with protein and fibre with a smoky and spicy flavour. It is great for batch-cooking for the freezer.

Ingredientes
1 can red kidney bean, drained and rinsed
1 can black bean, drained and rinsed
1 can chopped tomato
1 red onion, finely minced
3 clove garlic, finely minced
1 fresh red pepper, chopped (optional)
2 carrots, diced
1/4 head broccoli, florets
4 kale leaves, finely chopped
½ -1 fresh chilli, chopped
2 tablespoon fresh coriander stalks, finely minced
1 tablespoon tomato paste
1 tablespoon miso paste (optional but highly recommend)
1 tablespoon olive oil
2 bay leaves
1 cinnamon stick
1 clove
2 teaspoon cumin powder
1 teaspoon oregano
1/2 teaspoon smoked paprika
ground black pepper to taste
Garnish fresh coriander leaves.
Preparação
Add olive oil to a saucepan. Heat up the oil then add the onions and a pinch of salt. Saute for about 5 minutes. add diced carrots and cook for another 2-3 minutes.
Add garlic coriander stalks, cook for another minute.
Add black and red kidney beans, chilli and red pepper and stir well.
Add broccoli florets and stir.
Add a can of chopped tomatoes, tomato paste and all the herbs and spices.
Stir and let it cook, covered for about 10 minutes or until thickens up.
Add kale, mix well and close the lid and let it cook in low heat for another 5 minutes.
Taste and adjust season and serve.
It keeps well in the fridge for up to 5 days or freeze it for up to 3 months.
